Garlic Herb Roasted Lamb

Ingredients

- 1 1/2-2 lbs roast lamb
- 4 garlic cloves, peeled and crushed
- 2 teaspoons coarse salt
- 1 tablespoon minced fresh sage
- 2 teaspoons minced rosemary
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Recipe
- 1 preheat oven to 450°f
- 2 pat lamb dry with paper towel and place in shallow roasting pan.
- 3 in a small bowl mix all the ingredients together and rub all over the lamb.
- 4 place lamb in oven and roast for 15 minutes.
- 5 lower temperature to 300°f and roast another 20 minutes or until lamb reaches 150°f on thermometer.
- 6 remove lamb and let rest for to minutes covered loosely with a tent of tin foil.
