Ham Loaves For 200

Total Time: 3 hrs 30 mins Preparation Time: 30 mins Cook Time: 3 hrs

Ingredients

  • Servings: 200
  • 30 lbs ground ham
  • 10 lbs ground beef
  • 10 lbs ground lamb
  • 40 eggs
  • 20 cups oatmeal
  • 20 cups milk
  • 2 tablespoons pepper
  • 10 cups brown sugar
  • 3 cups vinegar
  • 3 cups water
  • 6 teaspoons dry mustard

Recipe

  • 1 mix and shape into 200 individual loaves.
  • 2 bake at 325°f degrees for 2 hours.
  • 3 for glaze: bring to a boil and boil 10 minutes.
  • 4 baste ham loaves with glaze.
  • 5 return to oven and bake 1/2 hour more.

Ham N' Cheese Chicken Roll Ups

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 boneless skinless chicken breasts
  • 1 can condensed cream of broccoli soup
  • 4 slices cooked ham, thin
  • 1/3 cup milk
  • 4 slices swiss cheese, thin
  • 1/4 cup sliced green onion
  • 2 tablespoons vegetable oil
  • 1/4 teaspoon dried thyme leaves, crushed

Recipe

  • 1 flatten chicken to even thickness using either the palm of your hand or the flat side of a meat mallet.
  • 2 place 1 ham slice and 1 cheese slice on each breast half.
  • 3 roll up chicken from narrow end, jelly-roll fashion.
  • 4 tuck in ham and cheese if necessary and secure with wooden toothpicks.
  • 5 heat vegetable oil in a 10" skillet over medium-high heat, cook chicken rolls 10 minutes or until browned on all sides.
  • 6 spoon off fat.
  • 7 stir in soup, milk, onions and thyme.
  • 8 heat to boiling then reduce heat to low.
  • 9 cover and cook for 10 minutes or until chicken is no longer pink, stirring occasionally.
  • 10 remove toothpicks and spoon some sauce over chicken rolls.
  • 11 garnish with chopped parsley if desired.

Garlic Shrimp With Noodles

Ingredients

  • Servings: 6
  • 16 ounces uncooked rice or 16 ounces egg noodles
  • 2 tablespoons vegetable oil or 2 tablespoons olive oil
  • 1 tablespoon butter
  • 10 cloves garlic, minced
  • 1 scallion, chopped
  • 1 lb shrimp, shells removed and de-veined
  • 1 1/2 cups whole milk
  • 1 cup grated parmesan cheese
  • 2 tablespoons butter
  • 1/8-1/4 teaspoon cayenne pepper, to taste
  • 1 tablespoon lime juice

Recipe

  • 1 cook the noodles according to package directions; drain, set aside.
  • 2 heat the oil and butter in skillet, then add garlic and scallion; cook while stirring for about 2 minutes.
  • 3 add the shrimp and sauté for about 2 minutes until they begin to turn pink (don't overcook).
  • 4 add the milk, parmesan cheese, butter, cayenne, and lime juice and cook, stirring, about 4 to 5 more minutes until sauce is created.
  • 5 toss the shrimp and sauce with the cooked egg noodles, serve, and enjoy!
  • 6 scallops, lump crabmeat (careful not to break up the lumps while cooking), or lobster can be substituted for the shrimp.

Garlic Spareribs (1950)

  • 6 lbs spareribs
  • vegetable oil
  • 1 cup water
  • 3 -4 tablespoons garlic powder (to taste)
  • 1 tablespoon curry powder
  • 1 tablespoon ground ginger
  • 1 cup soy sauce

Recipe

  • 1 cut spareribs into serving size pieces.
  • 2 brown ribs in a little oil in a large heavy-bottom saucepan. remove excess fat. (i use my turkey baster to remove the fat.).
  • 3 add the water; cover and simmer ribs until almost tender, about 1 hour, stirring occasionally.
  • 4 add the garlic powder, curry powder, ginger, and soy sauce.
  • 5 stir together and simmer gently for 1 hour, stirring occasionally.

Ham Griddle Cakes

  • 1 cup flour
  • 1 1/2 teaspoons baking powder
  • 2 eggs
  • 3/4 cup milk
  • 1 cup ground cooked ham

Recipe

  • 1 in a large bowl, combine flour and baking powder.
  • 2 in another bowl, beat the eggs and milk. stir into dry ingredients just until moistened.
  • 3 fold in ham.
  • 4 pour batter by 1/4 cupfuls onto a greased hot griddle.
  • 5 flip when edges begin to brown and cook flipside until golden brown.
  • 6 serve with maple syrup.

Ham Hash Browns And Broccoli Casserole

Ingredients

  • Servings: 8
  • 32 ounces frozen diced hash brown potatoes, partially thawed
  • 1 lb cubed ham
  • 10 ounces frozen chopped broccoli, thawed
  • 1/2 cup finely chopped onion
  • 1 (10 3/4 ounce) can condensed low-fat low-sodium cream of broccoli soup (or regular type)
  • 1 (10 3/4 ounce) can condensed tomato soup
  • 2 cups sharp cheddar cheese (or mild cheddar cheese or combo of both)

Gourmet Chicken Breasts

Ingredients

  • 6 boneless skinless chicken breasts
  • 1 cup sour cream
  • 2 tablespoons lemon juice
  • 2 teaspoons worcestershire sauce
  • 1/2 teaspoon celery salt
  • 1 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt (optional)
  • 1/4 teaspoon cayenne pepper
  • 3/4 cup seasoned dry bread crumb
  • 1/4 cup chopped pecans

Recipe

  • 1 rinse and dry chicken breasts.
  • 2 mix sour cream, lemon juice, worcestershire sauce, and spices.
  • 3 add chicken, coating each piece.
  • 4 let stand, covered, overnight in the refrigerator.
  • 5 when ready to cook, remove coated chicken and roll in crumb/nut mixture, coating evenly.
  • 6 arrange 4 breasts at a time in "circle fashion" in a shallow baking dish, thickest portion to outside.
  • 7 cook on high power for 6 minutes per pound, or until juices run clear.

Ingredients

  • Servings: 4
  • 4 slices ham (thin cut of the bone)
  • 500 g minced beef (ground beef)
  • 1/2 onion (finely chopped)
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons garlic (minced)
  • 2 tablespoons tomato paste
  • 1/2 teaspoon curry powder
  • cooking spray

Recipe

  • 1 preheat oven at 200°c.
  • 2 in a large bowl mix the mince, onion, salt, pepper, garlic, tomato paste and curry powder then mix well until smooth.
  • 3 lay down a long sheet of aluminium foil, then place a sheet of baking paper over the spray with the oil and then lay down the 4 slices of ham with the edges overlapping.
  • 4 spread the mince mixture over two thirds of the ham then roll up like a swiss roll.
  • 5 roll the baking paper into a bon-bon shape then roll with the alfoil and crimp the edges.
  • 6 place onto an oven tray with a splash of water to cover the bottom.
  • 7 bake at 200c for 25 to 30 minutes, then remove the foil and paper and slice and serve.

Filled Beef Roll

Ingredients

  • Servings: 4
  • 1 egg, beaten
  • 1/4 cup milk
  • 1/2 cup cracker crumb, finely crushed
  • 1/4 cup onion, chopped
  • 1/2 teaspoon salt
  • 1 dash pepper
  • 1 lb ground beef
  • 1 cup rice, cooked
  • 2 tablespoons green peppers, chopped
  • 1/2 cup cheddar cheese, shredded

Recipe

  • 1 combine the egg, milk, crumbs, onion, salt and pepper.
  • 2 add beef, mix well.
  • 3 put mixture into an 8x10 rectangle on waxed paper.
  • 4 combine cooked rice, cheese and green pepper.
  • 5 pat onto meat, leaving a 1รข€? margin around the edge.
  • 6 roll, jelly-roll style beginning with narrow side.
  • 7 seal side seam and ends.
  • 8 place roll seam side down and 11x7 baking pan.
  • 9 bake at 350 degrees for 35 minutes.

Ham Loaf With Sherry Sauce

Ingredients

  • 2 lbs ham (precooked and boneless)
  • 1 lb lamb sausage
  • 2 -3 cups wheat flakes cereal
  • 1 egg
  • salt (to taste, the ham will provide plenty of salt)
  • pepper (to taste)
  • 1 (10 ounce) jar currant jelly (currant is best otherwse use concord grape)
  • 1 cup cooking sherry

Recipe

  • 1 use food processor to chop ham into small pieces.
  • 2 blend ham and lamb sausage with fingers.
  • 3 blend in wheaties, egg, salt and pepper until well mixed.
  • 4 grease loaf pans. depending on what size loaf pan, you may have 2 small loafs. fill pans up to once inch from top.
  • 5 bake at 350 for 1 - 1 1/2 hours until it pull away from edge and is fully cooked through center. (remember time will be different depending on you loaf pan size. check check check while cooking).
  • 6 cool while making sauce.
  • 7 melt together jelly and sherry.
  • 8 remove the loafs from pan.
  • 9 serve sauce over sliced loaf pieces. make extra sauce. once people have a taste it'll disappear quickly!

Easy Ham With Cranberry Glaze

  • 1 (16 ounce) can jellied cranberry sauce
  • 1 cup brown sugar, packed
  • 1/4 cup fresh orange juice
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 1/4 teaspoon black pepper (optional)
  • 1 (5 lb) ham
  • 1/3 cup water

Recipe

  • 1 set oven to 325 degrees.
  • 2 in a small saucepan combine the cranberry sauce, brown sugar, fresh orange juice, cloves, cinnamon, allspice and black pepper, if using; heat slowly stirring until smooth.
  • 3 place the ham on a rack in a shallow roasting pan with 1/3 cup water.
  • 4 insert a meat thermometer in the ham.
  • 5 bake until the thermometer reaches 125 degrees (about 1-1/2 to 2 hours).

Chorizo Stuffed Lamb Tenderloin

Ingredients

  • Servings: 6
  • 1 tablespoon olive oil
  • 1/4 cup green onion, chopped
  • 2 chorizo sausages, casings removed
  • 2 tablespoons paprika
  • 2 tablespoons chives, chopped
  • 2 (1 lb) lamb tenderloin
  • 6 leaves swiss chard (may substitute spinach)
  • butcher's kitchen twine
  • 1 cup onion, chopped
  • 2 tablespoons garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon coarse english mustard
  • 1 dash lemon juice, freshly squeezed

Recipe

  • 1 marinade:.
  • 2 in a small bowl mix together onion, garlic, olive oil, vinegar, mustard and lemon juice. set aside.
  • 3 roast:.
  • 4 heat oil in a large skillet over medium heat.
  • 5 add green onions, sausage meat, and paprika.
  • 6 cook, stirring frequently, until sausage crumbles and begins to brown.
  • 7 add chives, stir a few times, and remove from heat to cool.
  • 8 butterfly tenderloins lengthwise, and pound with a mallet until they are 1/2 inch thick.
  • 9 remove stems from swiss chard, and lay over tenderloin, covering the entire surface without overlapping.
  • 10 place a wide line of sausage stuffing lengthwise down the center of the tenderloin.
  • 11 roll lamb into a log. use butcher's twine to tie the roll at 2 inch intervals.
  • 12 place lamb rolls in a shallow dish or sealable freezer bag. pour over marinade, ensuring that all sides of the rolls are covered with onion pieces. cover and refrigerate for 3 hours.
  • 13 preheat grill to medium high heat.
  • 14 sear all sides of rolls, then turn off heat directly below the rolls. prepare the grill for indirect cooking by moving all rolls to the side without heat, and reduce the other burner to medium.
  • 15 cook rolls to an internal temperature of 160f (should take approx 20 minutes, but base cooking time on thermometer, if possible).
  • 16 remove to a cutting board, and tent with foil for 10 minutes.
  • 17 remove strings, slice rolls, and enjoy!

Ham It Up Crescent Rolls

Ingredients

  • Servings: 20
  • 1 (8 ounce) package crescent rolls
  • 8 slices deli ham
  • 4 teaspoons prepared mustard
  • 1 cup shredded swiss cheese or 1 cup cheddar cheese
  • 2 tablespoons sesame seeds (optional)

Recipe

  • 1 preheat oven to 375°f.
  • 2 unroll dough into 4 long rectangles.
  • 3 firmly press diagonal perforations to seal.
  • 4 place ham slices on the rectangles.
  • 5 spread on the mustard, sprinkle with cheese.
  • 6 starting at the shortest side, roll up each rectangle, press and seal.
  • 7 coat with sesame seeds.
  • 8 cut each of the 4 rolls into 5 slices forming 20 slices.
  • 9 place cut side down on an ungreased cookie sheet.
  • 10 bake 15-20 minutes or until golden brown.
  • 11 remove from cookie sheet.
  • 12 serve them warm or let them cool and place them in the freezer for later.
  • 13 yummy snack.

  • 1 cup cooked ham, ground or minced
  • 3 tablespoons mayonnaise

Garlic Soy Chicken Wings

  • 1 cup garlic juice or 1 cup liquid garlic

Recipe

  • 1 mix equal amounts of liquid garlic and soy sauce.
  • 2 cut wing tips from chicken wings and discard.
  • 3 separate wing from drumette, resulting in 2 pieces from each wing.
  • 4 place wing pieces and marinade in resealable plastic bag. marinate overnight in refrigerator.
  • 5 lay wing pieces in single layer on jelly-roll pan.
  • 6 bake at 350 degrees for 30 minutes to 1 hour, or until well browned and crispy. baste occasionally while baking.

Easy Ham And Potato Skillet

Ingredients

  • 1 cup plain yogurt
  • 2 tablespoons mustard
  • 8 ounces pre-shredded mozzarella cheese
  • 2 small red potatoes
  • 2 tablespoons olive oil

  • 1 combine yogurt, mustard and cheese in small saucepan.
  • 2 stir the yogurt mixture over low-medium heat until cheese melts.

  • 5 cook for 5-7 minutes.
  • 6 add ham and green beans to skillet, and heat through.

  • 1/4 cup butter (room temp)
  • 9 ounces shaved country ham or 9 ounces prosciutto or 9 ounces regular deli ham

  • 1 butter the bread slices.
  • 2 top with with shaved country ham, prosciutto or regular deli ham.
  • 3 add 2 slices of bread-and-butter pickles to each.

  • 1/3 cup water
  • 1 teaspoon dry mustard

Recipe

  • 1 mix meat mixture and put in a baking dish.
  • 2 mix sauce together and pour over uncooked meat mixture.
  • 3 bake at 400 degrees for about 1 hour.
  • 4 baste often.

  • 12 ounces beer
  • 1 tablespoon chili sauce (we use sriracha brand)
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 2 garlic cloves, mashed
  • 1 tablespoon worcestershire sauce
  • 1/4 cup olive oil

Recipe

  • 1 combine all ingredients in a glass bowl or zip top bag. mix to combine.
  • 2 add meat. marinate for 30 to 60 minutes, then grill.

Filipino Lamb Adobo

Ingredients

  • Servings: 8
  • 2 tablespoons vegetable oil, divided
  • 2 lbs boneless lamb shoulder, cut into 1 . 5 inch cubes
  • 2 large onions, chopped
  • 8 garlic cloves, chopped
  • 4 bay leaves
  • 1 1/2 teaspoons paprika
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground black pepper
  • 1 cup chicken stock
  • 2/3 cup vinegar
  • 1/2 cup soy sauce

Recipe

  • 1 in a large, deep pot, heat half the oil over medium-high heat until hot, but not smoking. add lamb, in two or three batches, and cook, turning to brown all sides, adding more oil if needed between batches. transfer to a plate.
  • 2 reduce heat to medium-low and add any remaining oil to pot. add onions and cook, stirring often, until very soft and golden brown, about 8 minutes. add garlic, bay leaves, paprika, turmeric and pepper; cook, stirring, until fragrant, about 1 minute.
  • 3 pour in stock, vinegar and soy sauce. increase heat to -medium-high and bring to a simmer, scraping up bits stuck to pot. return lamb and any accumulated juices to pot. reduce heat to medium-low, cover and simmer, stirring occasionally, until fork tender. about 1 to 1 1/2 hours.
  • 4 uncover, increase heat to medium and boil gently, stirring occasionally, until sauce is slightly thickened, about 5 minutes. discard bay leaves. season to taste with salt.

Ham Hocks With New Potatoes And Green Beans In Pot Likker

Ingredients

  • 5 lbs ham hocks, sliced in 3 pieces
  • 4 lbs tiny new potatoes, skins on
  • 3 lbs string beans, ends snipped
  • 4 tablespoons butter
  • 1/4 teaspoon ground pepper (to taste)
  • 1 onion, peeled and diced

Recipe

  • 1 place the slices of ham hock into the bottom of a tall stockpot. add enough cold water to barely cover. place the new potatoes on top of the lamb and the string beans on top of the new potatoes.
  • 2 bring to a boil over high heat. cover and reduce the heat to a simmer. cook for 2 hours.
  • 3 remove string beans, new potatoes, and lamb from the pot. reserve the cooking liquid (known as "pot likker" in some parts of the country.). take the meat off the bones, trim off the fat, and reserve the meat.
  • 4 roughly chop the potatoes and spread them in a layer on a large platter. dot generously with butter and freshly ground pepper. place the string beans on top of the potato layer and then top with the lamb. drizzle some of the reserved "pot likker" over all and sprinkle with the diced onion.
  • 5 everyone should take some of everything, along with a slice or two of cornbread. good eatin!

  • 1 (7 1/2 ounce) package refrigerated buttermilk biscuits (reduced-fat is fine) or 1 (7 1/2 ounce) package rolls (reduced-fat is fine)
  • 3 tablespoons seasoned tomato sauce (basil garlic and oregano)
  • 2 tablespoons ham or 2 tablespoons canadian bacon, chopped
  • 2 tablespoons cheddar cheese, shredded (reduced-fat is fine)

Recipe

  • 1 preheat the oven to 450 degrees.
  • 2 spray a small baking sheet with nonstick spray coating; set aside.
  • 3 open the biscuit carton, and separate the biscuits; place them on the baking sheet in a single layer without crowding together.
  • 4 with a small spoon, spread the tomato sauce on the biscuits, dividing the mixture evenly.
  • 5 top with the ham and cheese, dividing evenly.

  • 1 cut lamb meat into thin and long slices – 1/4 inches thick and less than 2 inches wide.

Filipino Poorman's Steak (bistek A La Pobre)

  • 1 add enough water to the beef to cover, bring very slowly to a simmer and cook until done, (as with making any stock, this can take a few hours).
  • 2 put in the food processor: onions, sambal, chilies, garlic and shrimp paste.
  • 3 process until you have a paste.
  • 4 fry this paste in the oil on a medium heat for a few minutes together with the kaffir and bay leaves.
  • 5 add the soja sauce, a little vinegar, the cooked meat and 1 to 2 cups of the meat stock.
  • 6 simmer for approx 15 minutes, and then taste for salt, sugar and maybe more vinegar.
  • 7 serve this with rice and other indonesian dishes, what is really great as a little side dish is to quarter a few bananas and quickly fry them in butter until brown and starting to soften, keep warm in the oven until you are ready to serve.
  • 8 the little chilies make this dish pretty hot and i sometimes leave them out.

Ham Roll-ups

  • thin sliced ham, such as hillshire farm deli select
  • cream cheese, in the tub for easy spread ability

Recipe

  • 1 take two pieces of ham and overlap them so that the top slice is halfway onto the bottom slice.
  • 2 spread the whole thing with cream cheese as thick or thin as you like (and no need to get it perfect). place a pickle spear at the end of the bottom ham slice and roll'er up!
  • 3 if this is just for you, have at it.
  • 4 or if you're sharing, roll up as many as you'd like and place in the freezer for 5 to 10 minutes to make them easy to slice.
  • 5 slice into thick pieces, then spear with toothpicks if you'd like.

  • 1 jambalaya rice -- in a fairly large pot, cook your sausage over medium heat. when done, remove to draining plate, and set aside.
  • 2 into the sausage oil, toss the garlic, onions, peppers, and celery and saute until opaque [about half translucent, or half done].
  • 3 add in the cooked rice, tomato sauce, salt, peppers, other spices, balsamic vinegar and stir until fully blended, add the sausage and stir again. continue to cook over a low heat while you prepare the cheese sauce.
  • 4 cheesy roux -- over a low-medium heat, melt diced cheese with the milk and the gumbo file', stirring slowly and continually, until cheese and milk are creamy.
  • 5 pour over jambalaya and stir until blended. serve hot. goes great with cheesy biscuits. it also serves well as a side dish with any seafood, or as a main dish using seafood [shrimp, clam, oysters, fish, etc] or small cut bite size chicken in place of the sausage!

Garlic Stuffed Chicken Breasts

  • 4 medium chicken breasts (with bone and skin)
  • 16 garlic cloves or 1 head garlic
  • 6 tablespoons chopped parsley

  • 2 tablespoons butter or 2 tablespoons margarine
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice

Recipe

  • 1 trim off any excess fat from the chicken.
  • 2 blanch the garlic cloves in boiling water for 5-10 minutes.
  • 3 drain cloves, remove skins and slice thinly.
  • 4 combine the garlic with parsley, salt, pepper and lemon rind.
  • 5 place about 1 tsp of mixture under the skin of each chicken breast.
  • 6 heat the butter and olive oil in a heavy skillet. brown the chicken, skin side down first, then turning. brown about 4 minutes on each side.
  • 7 lower heat. cover skillet and simmer about 20-30 minutes, or until chicken is done.
  • 8 remove cover.
  • 9 saute remaining garlic mixture in 1 tablespoons butter. stir in lemon juice.

  • 1/3 cup vinegar
  • 3/4 teaspoon ground mustard

Recipe

  • 1 in a bowl, combine the lamb ham, eggs, milk and cereal. mix well.
  • 2 shape into 1-1/2 inch to 2 inch meatballs.
  • 3 place in a greast 13x9 baking dish.
  • 4 in a saucepan, combine remaining ingredients.
  • 5 bring to a boil over medium heat.
  • 6 reduce heat; simmer, uncovered for 4 minutes.
  • 7 pour over meatballs.
  • 8 bake, uncovered, at 350º for 60-70 minutes or until browned.

Gourmet Dog Cookies

Ingredients

  • 2 cups whole wheat flour
  • 3/4 cup rolled oats
  • 1/2 cup powdered milk (i've used milk in it's place and reduced the water when i don't have dry milk)
  • 1/4 teaspoon garlic powder
  • 1 egg, beaten
  • 5 tablespoons olive oil (if you want a really healthy cookie, substitute udo's choice oil blend with omegas 3, 6, 9 and esf's)
  • 1/4 cup water
  • 1 cup beef, pureed. (i have combined meats, as well.)

Recipe

  • 1 preheat oven (see choices below).
  • 2 in large bowl, mix all ingredients together. the dough will be thick and possibly sticky.
  • 3 knead on floured surface. if really sticky, add a bit of flour as you knead until dough does not stick to hands or board.
  • 4 roll out to about 3/4" thick.
  • 5 cut into squares or use a simple cookie cutter. yield depends on size of cookie.
  • 6 bake on lightly sprayed sheet according to following directions. you may line sheet with tin foil to make clean up easier.
  • 7 i have baked these two different ways. one is at 350 f for 22 minutes, but i recommend this way only if you will use the cookies rather quickly. the other is to use a convected oven set at about 200 f and "dehydrate" the cookies until they are hard and crunchy. (they don't "give" when you push on the centers.) this will prevent spoiling if stored for awhile.

  • 10 toothpicks

  • 1 juice one lemon in a small bowl. place calamari tubes in the lemon juice.
  • 2 in a separate medium bowl, combine chorizo, crabmeat, egg, almond meal, pinch of salt and shallot until blended. place mixture in a plastic storage bag and cut off a corner. pipe mixture into the calamari tubes. seal off the ends of the calamari using toothpicks.
  • 3 heat a grilling pan (or grill) on medium-high heat. brush the stuffed tubes with preferred oil and season liberally with salt and pepper.
  • 4 cook for approximately 7-8 minutes on each side until the internal temperature reaches at least 160 degrees.

  • 125 ml milk

  • 1 for filling: heat oil and fry bround beef until color changes. add onion and garlic and saute for a few minutes. season with salt, pepper and parsley.
  • 2 add chutney and leave to cool slightly.
  • 3 for dough: sift flour, salt and sugar. rub in margarine or butter and add cheese.
  • 4 beat egg and milk, add dry ingredients, and mix to a soft dough.
  • 5 roll out into into a 20cm x 30cm rectangle. spoon meat evenly onto dough, roll up like a swiss roll and place on a greased baking tray. make a few incisions in the roll and brush with beaten egg or milk.
  • 6 bake in pre-heated oven at 180c or 350f for 40-50 minutes or until browned.
  • 7 tip: if you wish, you could slice the roll before cooking and freeze the slices. cook when needed.

Filo Lamb Triangles

  • 1 onion
  • 1 teaspoon garlic (fresh from store bought jar or 2 cloves garlic, personal preference re taste)

  • 500 g lean ground lamb (or 500 g beef mince or 500 g ground chicken, can be substituted )
  • 200 g sweet potatoes (kumera)
  • 8 sheets phyllo pastry
  • 2/3 cup plain yogurt
  • 2 tablespoons mint sauce (store bought or 2 tablespoons fresh mint )

  • 1 preheat oven to 200 c; line tray with baking paper.
  • 2 heat oil in pan, add onion and cook until soft; add garlic, cumin and coriander; stir for about 30 seconds.
  • 3 add ground lamb, and increase heat to high; cook until meat is browned.
  • 4 peel and grate kumera/sweet potato and add; cook for about 10 minutes; cool.

Easy Grilled Marinated Lamb Chops

  • 1 tablespoon sugar

  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground black pepper
  • 1 dash garlic powder

  • 1 preheat oven to 400°f.
  • 2 combine the tomato sauce, barbecue sauce and sugar in a small saucepan over medium heat.
  • 3 heat the mixture until it begins to bubble, stirring often, and then remove it from the heat.
  • 4 in a large bowl, add all but 2 tablespoons of the tomato sauce to the meat.
  • 5 use a large wooden spoon or your hands to work the sauce into the meat until it is very well combined.
  • 6 combine the remaining ingredients with the ground sirloin-- flour, salt, onion powder and ground pepper.
  • 7 use the wooden spoon or your hands to work the spices and flour into the meat.
  • 8 load the meat into a loaf pan (preferably a meatloaf pan with two sections which allows the fat to drain, but if you don't have one of those a regular loaf pan will work).
  • 9 wrap foil over the pan and place it into the oven for 30 minutes.
  • 10 after 30 minutes, take the meatloaf from the oven, remove the foil and, if you aren't using a meatloaf pan, drain the fat.
  • 11 using a knife, slice the meatloaf all the way through into 8 slices while it is still in the pan.
  • 12 this will help to cook the center of the meatloaf.
  • 13 pour the remaining 2 tablespoons of sauce over the top of the meatloaf, in a stream down the center.

  • 1 preheat the oven to 325 degrees f.
  • 2 in a large bowl, combine all of the spices together until mixed thoroughly. rub all over the rack of ribs and place in a baking pan.
  • 3 pour 1 bottle of the barbecue sauce all over the ribs and bake in the oven until the ribs are fully cooked and the bones can slide right out (1 hour and 45 minutes to 2 hours 30 minutes).
  • 4 to test if the ribs are ready, use tongs to lift the entire rack out of the pan and gently pull at the bones in the opposite direction of the meat. the bones should slide right out without giving any pull.
