Elena's Chicken Francese

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1/2 cup flour
  • 1 -1 1/2 lb chicken tenderloins, about
  • 3 eggs
  • 1/2 cup parmesan cheese
  • 1 tablespoon parsley
  • 1/2 teaspoon salt
  • 1 dash pepper
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 3 tablespoons lemon juice

Recipe

  • 1 place flour in a shallow bowl.
  • 2 roll chicken in flour to coat.
  • 3 beat eggs, parmesan, parsley, salt& pepper until foamy.
  • 4 heat olive oil& butter in skillet over med.
  • 5 high heat.
  • 6 dip chicken is egg mixture.
  • 7 place in skillet, cook chicken until browned, about 3 min per side.
  • 8 squeeze lemon juice on chicken and cook 1 min.
  • 9 longer.
