Elena's Chicken Francese

Ingredients

- 1/2 cup flour
- 1 -1 1/2 lb chicken tenderloins, about
- 3 eggs
- 1/2 cup parmesan cheese
- 1 tablespoon parsley
- 1/2 teaspoon salt
- 1 dash pepper
- 2 tablespoons olive oil
- 1 tablespoon butter
- 3 tablespoons lemon juice
Recipe
- 1 place flour in a shallow bowl.
- 2 roll chicken in flour to coat.
- 3 beat eggs, parmesan, parsley, salt& pepper until foamy.
- 4 heat olive oil& butter in skillet over med.
- 5 high heat.
- 6 dip chicken is egg mixture.
- 7 place in skillet, cook chicken until browned, about 3 min per side.
- 8 squeeze lemon juice on chicken and cook 1 min.
- 9 longer.
