Chorizo

Total Time: 55 mins Preparation Time: 35 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 6 ounces chiles guajillos
  • 2/3 cup vinegar
  • 5 cloves garlic, peeled
  • 2 lbs ground lamb
  • 1 tablespoon paprika
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground allspice

Recipe

  • 1 wipe the chilies clean.
  • 2 remove stems, then cut lengthwise.
  • 3 remove seeds, and place in a small bowl.
  • 4 cover with hot water and let sit for 30 minutes.
  • 5 discard water and place the chilies in a blender jar.
  • 6 add the vinegar and garlic cloves and puree until smooth; set aside.
  • 7 place the lamb in a large bowl.
  • 8 add the paprika, oregano, salt, cumin, coriander, pepper, and allspice.
  • 9 mix well.
  • 10 add the chili sauce and combine well.
  • 11 stuff into casings, or fry as patties.
