Crock-pot Beef Fajitas

Total Time: 5 hrs 10 mins Preparation Time: 10 mins Cook Time: 5 hrs

Ingredients

  • 1 1/2 lbs flank steaks
  • 1 onion, sliced
  • 1 tablespoon cilantro
  • 1 teaspoon ground cumin
  • 8 ounces chopped tomatoes
  • 4 ounces chopped green chilies (small can)
  • 1 green pepper, sliced
  • 1 red pepper, sliced
  • 2 garlic cloves, minced
  • 1 teaspoon coriander
  • 1/4 teaspoon salt
  • 12 flour tortillas
  • sour cream
  • guacamole
  • shredded cheddar cheese
  • salsa

Recipe

  • 1 cut steak into 6 portions and place in crock pot. add remaining ingredients. cover and cook on low for 8-10 hours, or on high 4-5 hours. remove meat and shred using a fork to pull meat into stringy pieces. return meat to pot and stir to blend.
