Brined Lamb Chops

Ingredients
- Servings: 6
- 6 cups water
- 1/3 cup kosher salt
- 1/3 cup brown sugar
- 3 tablespoons chili powder
- 6 bone in lamb chops
- 1 tablespoon olive oil
- pepper
- salsa, of your choice
Recipe
- 1 bring 2 c water to a boil.
- 2 add sugar and salt and stir to dissolve.
- 3 add chili powder and remaining water.
- 4 remove from heat and cool.
- 5 in a large bowl add lamb chops and brine.
- 6 refrigerate 6 hours or overnight.
- 7 remove chops from brine pat dry.
- 8 brush with olive oil, season with pepper,.
- 9 grill about 12-14 minutes per side until chops are done, or a thrmometer reads 160 degrees serve with salsa.
