Ingredients
- Servings: 2
- 2 cups chopped cooked chicken breasts or 2 cups firm tofu
- 1/4 cup chopped red onion
- 1/2 stalk celery
- 1 teaspoon sunflower seeds
- 1/4 teaspoon finely minced fresh ginger
- 1 1/2 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- romaine lettuce
Recipe
- 1 toss all the ingredients together until fully coated with olive oil and lemon juice. serve on a bed of romaine lettuce.
