Ginger Chicken Or Tofu Salad

Ingredients

  • Servings: 2
  • 2 cups chopped cooked chicken breasts or 2 cups firm tofu
  • 1/4 cup chopped red onion
  • 1/2 stalk celery
  • 1 teaspoon sunflower seeds
  • 1/4 teaspoon finely minced fresh ginger
  • 1 1/2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • romaine lettuce

Recipe

  • 1 toss all the ingredients together until fully coated with olive oil and lemon juice. serve on a bed of romaine lettuce.
