Gefullte Kartoffeln (sausage Stuffed Potatoes, Hamburg Style)

Ingredients

  • Servings: 12
  • 6 russet potatoes
  • water
  • salt
  • 2 tablespoons butter
  • 1/2 cup onion, minced
  • 1/4 lb sausage meat
  • 1 tablespoon chopped parsley
  • 1/2 teaspoon salt
  • 1/4 black pepper

Recipe

  • 1 preheat oven to 350°f.
  • 2 halve the potatoes and scoop out the centers, leaving unbroken shells.
  • 3 cook centers in boiling salted water until tender.
  • 4 drain and mash.
  • 5 combine with remaining ingredients.
  • 6 stuff into shells.
  • 7 place in a greased baking dish.
  • 8 bake for 1 hour.
