Ingredients

- 6 russet potatoes
- water
- salt
- 2 tablespoons butter
- 1/2 cup onion, minced
- 1/4 lb sausage meat
- 1 tablespoon chopped parsley
- 1/2 teaspoon salt
- 1/4 black pepper
Recipe
- 1 preheat oven to 350°f.
- 2 halve the potatoes and scoop out the centers, leaving unbroken shells.
- 3 cook centers in boiling salted water until tender.
- 4 drain and mash.
- 5 combine with remaining ingredients.
- 6 stuff into shells.
- 7 place in a greased baking dish.
- 8 bake for 1 hour.
