Baked Ham With Orange And Lime

Ingredients

  • Servings: 4
  • 4 1/2 lbs ham (unsmoked)
  • 1 orange
  • 2 limes
  • 1 bay leaf
  • 3 fresh parsley sprigs
  • 6 black peppercorns
  • 5 garlic cloves, crushed
  • 1 tablespoon dried oregano
  • 2 hot red chili peppers, seeded and minced
  • 2 tablespoons brown sugar
  • fresh ground black pepper

Recipe

  • 1 place ham in a large saucepan and cover with cold water; add the zest from one orange, 1 lime, bay leaf, parsley, and peppercorns.
  • 2 bring to a boil, over high heat; cover, reduce heat to a simmer, and cook 2 hours.
  • 3 preheat oven to 425 degrees f.
  • 4 once ham is cooked, allow to let cool to touch, remove from pan, then transfer to a cutting board; pull off the skin, but leave the fat on the meat.
  • 5 combine garlic, oregano, chilies, juice of 1 orange, juice of 2 limes, and sugar in a bowl; season with black pepper.
  • 6 rub all over ham, roast in oven until golden, about 20 to 25 minutes.
  • 7 slice ham and serve.
