Fresh Start Power Omelette

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 2 slices turkey bacon, chopped (or 1/4 cup diced lean ham)
  • 4 large eggs
  • 2 tablespoons orange juice (florida's natural brand premium orange juice)
  • 1/4 cup spinach, fresh and chopped
  • 1/4 cup red bell pepper, diced
  • 1 ounce low-fat cheddar cheese, shredded
  • salt and pepper

Recipe

  • 1 cook turkey bacon in skillet; add spinach and red bell pepper and sauté for one minute.
  • 2 combine eggs and orange juice, mix until smooth, and then add to skillet.
  • 3 cover and cook on low until omelet is firm.
