Garlic-sauced Chicken

Ingredients

- 1 tablespoon vegetable oil
- 1 (2 1/2 lb) chicken, quartered
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tablespoons all-purpose flour
- 1 1/2 cups boiling water
- 1/4 teaspoon crushed red pepper flakes
- 1/2 teaspoon salt
Recipe
- 1 heat oil in a large skillet over medium-high heat.
- 2 add chicken and cook until browned, about 5 minutes per side.
- 3 remove chicken and keep warm.
- 4 add onion and garlic to skillet drippings.
- 5 cook, stirring frequently until vegetables are a deep golden brown, about 5 minutes.
- 6 add flour and cook, stirring continually until golden brown.
- 7 gradually stir boiling water into skillet.
- 8 cook, stirring continutally until sauce thickens slightly.
- 9 return chicken pieces to skillet.
- 10 simmer, covered, stirring occasionally for 20 minutes or until chicken is cooked through.
- 11 add red pepper flakes and salt.
- 12 simmer 5 minutes longer.
- 13 serve chicken topped with sauce.
