Garlic-sauced Chicken

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 1 tablespoon vegetable oil
  • 1 (2 1/2 lb) chicken, quartered
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups boiling water
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 teaspoon salt

Recipe

  • 1 heat oil in a large skillet over medium-high heat.
  • 2 add chicken and cook until browned, about 5 minutes per side.
  • 3 remove chicken and keep warm.
  • 4 add onion and garlic to skillet drippings.
  • 5 cook, stirring frequently until vegetables are a deep golden brown, about 5 minutes.
  • 6 add flour and cook, stirring continually until golden brown.
  • 7 gradually stir boiling water into skillet.
  • 8 cook, stirring continutally until sauce thickens slightly.
  • 9 return chicken pieces to skillet.
  • 10 simmer, covered, stirring occasionally for 20 minutes or until chicken is cooked through.
  • 11 add red pepper flakes and salt.
  • 12 simmer 5 minutes longer.
  • 13 serve chicken topped with sauce.
