Garlic-peach Lamb Chops

Ingredients

- 2 bacon, slices thick-cut
- 2 lamb chops, 1-inch thick
- 6 -7 garlic cloves, minced
- 1 (15 ounce) can peach slices, drained, liquid reserved
- 1/4 cup cooking sherry
- 1/2 teaspoon soy sauce
Recipe
- 1 in a large skillet, cook the bacon until crisp over medium-low heat. remove bacon to drain on paper towel.
- 2 in the same pan, without draining, brown the lamb chops, still over medium low heat - about 5 minutes per side.
- 3 add the garlic to the pan, let heat for about one minute.
- 4 add liquid reserved from drained peaches, along with the cooking sherry and the soy sauce.
- 5 crumble the bacon and sprinkle over the chops.
- 6 cover the skillet, cook for 15 minutes. sauce should be thick and dark.
- 7 uncover, add the peach slices. cook until the slices are slightly browned, about 2 minutes.
- 8 serve, enjoy.
