Garlic-peach Lamb Chops

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 2
  • 2 bacon, slices thick-cut
  • 2 lamb chops, 1-inch thick
  • 6 -7 garlic cloves, minced
  • 1 (15 ounce) can peach slices, drained, liquid reserved
  • 1/4 cup cooking sherry
  • 1/2 teaspoon soy sauce

Recipe

  • 1 in a large skillet, cook the bacon until crisp over medium-low heat. remove bacon to drain on paper towel.
  • 2 in the same pan, without draining, brown the lamb chops, still over medium low heat - about 5 minutes per side.
  • 3 add the garlic to the pan, let heat for about one minute.
  • 4 add liquid reserved from drained peaches, along with the cooking sherry and the soy sauce.
  • 5 crumble the bacon and sprinkle over the chops.
  • 6 cover the skillet, cook for 15 minutes. sauce should be thick and dark.
  • 7 uncover, add the peach slices. cook until the slices are slightly browned, about 2 minutes.
  • 8 serve, enjoy.
