Gail's Rosemary Chicken

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 1 whole chicken, rinsed and patted dry
  • 2 tablespoons softened butter
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, ground
  • 3 garlic cloves, peeled
  • 1 onion, peeled and halved

Recipe

  • 1 cut a clove of garlic in half and rub chicken all over, inside and out with both halves.
  • 2 rub chicken with butter, then rosemary, salt, and pepper.
  • 3 place the remaining 2 cloves of garlic and the onion in the cavity of the chicken.
  • 4 bake, covered, at 350°f for 1 hour.
  • 5 remove foil for the last 10 mins of baking to brown skin.
