G'shtuptaful Lew'r - Stuffed Calf Liver

Ingredients

  • Servings: 8
  • 1 calf liver
  • salt and pepper
  • 1/4 cup flour
  • 3 slices salt lamb or 3 slices bacon
  • 3 cups soft breadcrumbs
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon sage leaf, crushed
  • 1 tablespoon onion, minced (more if desired)
  • 1/3 cup butter

Recipe

  • 1 for the dressing: combine the first five ingredients; add butter and toss lightly with a fork.
  • 2 wash liver in cold salted water and dry well.
  • 3 make an incision in the thickest part using a sharp knife.
  • 4 fill with stuffing.
  • 5 season with salt and pepper; dredge with flour.
  • 6 place in roasting pan and place strips of lamb on top.
  • 7 add a little water and bake at 350f for 1 hour.
