G'shtuptaful Lew'r - Stuffed Calf Liver

Ingredients
- Servings: 8
- 1 calf liver
- salt and pepper
- 1/4 cup flour
- 3 slices salt lamb or 3 slices bacon
- 3 cups soft breadcrumbs
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon sage leaf, crushed
- 1 tablespoon onion, minced (more if desired)
- 1/3 cup butter
Recipe
- 1 for the dressing: combine the first five ingredients; add butter and toss lightly with a fork.
- 2 wash liver in cold salted water and dry well.
- 3 make an incision in the thickest part using a sharp knife.
- 4 fill with stuffing.
- 5 season with salt and pepper; dredge with flour.
- 6 place in roasting pan and place strips of lamb on top.
- 7 add a little water and bake at 350f for 1 hour.
