Firecracker Chicken Stir Fry

Ingredients

• Servings: 4
• 2 tablespoons oil
• 3/4 lb chicken breast, cut into chunks
• 1/2 onion, cut into chunks
• 1/2 red bell pepper, cut into chunks
• 1/2 green bell pepper, cut into chunks
• 6 dried red chili peppers
• 1/4 cup ketchup
• 1 tablespoon hoisin sauce
• 1 teaspoon hot chinese chili paste
• 1/2 cup peanuts

Recipe

• 1 heat large skillet or wok until very hot.
• 2 add oil.
• 3 when oil is hot add chicken and stir fry until done, just a few minutes.
• 4 remove chicken.
• 5 add remaining ingredients except for peanuts and stir fry until tender crisp.
• 6 add chicken back into pan.
• 7 toss thru to reheat.
• 8 stir in peanuts.
