Corroboree Curry Hot Pot

Total Time: 2 hrs 10 mins Preparation Time: 10 mins Cook Time: 2 hrs

Ingredients

  • 1 lb braising steak
  • 1/2 pint stock
  • 2 onions
  • 1 tablespoon flour
  • 2 cooking apples
  • salt
  • 2 tomatoes
  • brown sugar
  • 1 tablespoon dripping
  • parsley
  • 2 teaspoons curry powder
  • 3 hard-boiled eggs
  • 2 ounces sultanas
  • 2 (1 ounce) packets potato crisps
  • 1 ounce seeded raisins

Recipe

  • 1 cut up the meat and slice the onions, apples and tomatoes.
  • 2 heat the drippings in a pan, add the meat, onion and apple, and fry until golden brown.
  • 3 add the tomatoes and curry powder and cook a few minutes longer.
  • 4 place the mixture in a casserole, add the dried fruit, and barely cover with stock.
  • 5 lid the casserole and cook at 350* for 1 1/2 hours.
  • 6 blend the flour with a little extra water and stir into the casserole.
  • 7 season to taste with a little salt and brown sugar. garnish with parsley and sliced egg. surround the casserole with potato crisps, and serve at once.
