Bourbon Pecan Lamb Roast

Total Time: 1 hr 50 mins Preparation Time: 20 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 8
  • 1 tablespoon olive oil
  • 2 lbs rolled lamb loin roast
  • salt and pepper
  • 1/3 cup pecan pieces
  • 1/4 cup bourbon
  • 3 tablespoons brown sugar

Recipe

  • 1 heat oven to 325°f.
  • 2 heat the oil in a large frying pan over medium-high heat and brown the lamb on all sides.
  • 3 put the meat on a rack in a roasting pan and sprinkle with salt and pepper.
  • 4 cook 30 minutes.
  • 5 meanwhile, add the pecans to the oil in the frying pan, cook over medium heat 1 minute and remove.
  • 6 combine the bourbon, sugar and 1/4 tsp salt.
  • 7 add to the frying pan and boil until the sugar dissolves and bourbon reduces slightly, 1 to 2 minutes.
  • 8 after the meat has cooked 30 minutes, begin basting with the bourbon sauce.
  • 9 cook until a meat thermometer stuck in the center reaches 160°f, about 30 more minutes.
  • 10 five minutes before the meat is done, sprinkle with pecans.
