Four Happiness Lamb

Total Time: 2 hrs 20 mins Preparation Time: 20 mins Cook Time: 2 hrs

Ingredients

  • Servings: 4
  • 1 1/2 lbs lean lamb
  • 1 cup water
  • 2 tablespoons sherry wine
  • 6 tablespoons dark soy sauce
  • 2 slices gingerroot
  • 1 scallion
  • 2 tablespoons sugar

Recipe

  • 1 put lamb in boiling water.
  • 2 boil 1 minute; drain. rinse in cold water.
  • 3 cut lamb in 2-inch cubes.
  • 4 put lamb and 1 cup water in an earthenware or any other heavy pot.
  • 5 bring water to boil.
  • 6 add sherry, soy sauce, ginger, and scallions.
  • 7 cover pot tightly; simmer over very low heat 2 hours.
  • 8 add sugar.
  • 9 bring to high heat.
  • 10 baste until gravy coats the meat.
  • 11 may be prepared in advance. may be frozen.
  • 12 reheat before serving.
