Four Happiness Lamb

Ingredients

- 1 1/2 lbs lean lamb
- 1 cup water
- 2 tablespoons sherry wine
- 6 tablespoons dark soy sauce
- 2 slices gingerroot
- 1 scallion
- 2 tablespoons sugar
Recipe
- 1 put lamb in boiling water.
- 2 boil 1 minute; drain. rinse in cold water.
- 3 cut lamb in 2-inch cubes.
- 4 put lamb and 1 cup water in an earthenware or any other heavy pot.
- 5 bring water to boil.
- 6 add sherry, soy sauce, ginger, and scallions.
- 7 cover pot tightly; simmer over very low heat 2 hours.
- 8 add sugar.
- 9 bring to high heat.
- 10 baste until gravy coats the meat.
- 11 may be prepared in advance. may be frozen.
- 12 reheat before serving.
