Firecracker Chicken Salad

Ingredients

- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic, chopped
- 2 tablespoons lime juice
- 1/4 cup olive oil
- 2 tablespoons cilantro, chopped
- 1 1/2 lbs chicken breasts (boneless and skinless)
- 1 sweet onion, sliced into thick rounds
- 1 red pepper, cut in quarters
- 2 zucchini, cut in half
- salt and pepper
- 1/2 cup mayonnaise
- 1/4 cup salsa
- 1 tablespoon lime juice
- 2 tablespoons cilantro, chopped
- salt and pepper
- 1 avocado, peeled and sliced
- 2 cups tortilla chips
Recipe
- 1 combine chili powder, cumin, garlic, lime juice, olive oil and coriander. brush on to chicken breasts, onion rounds, red pepper and zucchini.
- 2 marinate for 1 hour.
- 3 dressing: to make dressing, combine mayonnaise, salsa, lime juice and cilantro. season with salt and pepper. set aside.
- 4 preheat grill to high.
- 5 season chicken and vegetables with salt and pepper. place chicken breasts and veggies on grill. grill chicken for about 5 minutes per side or until juices run clear. cool.
- 6 grill veggies about 4 minutes per side or until tender. cool. remove skin from peppers, slice onions, peppers and zucchini into strips.
- 7 when chicken has cooled, slice it and mix with dressing. add veggies and toss lightly to coat with dressing or, serve dressing on the side.
- 8 garnish with avocado and tortilla chips.
