Firecracker Chicken Salad

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic, chopped
  • 2 tablespoons lime juice
  • 1/4 cup olive oil
  • 2 tablespoons cilantro, chopped
  • 1 1/2 lbs chicken breasts (boneless and skinless)
  • 1 sweet onion, sliced into thick rounds
  • 1 red pepper, cut in quarters
  • 2 zucchini, cut in half
  • salt and pepper
  • 1/2 cup mayonnaise
  • 1/4 cup salsa
  • 1 tablespoon lime juice
  • 2 tablespoons cilantro, chopped
  • salt and pepper
  • 1 avocado, peeled and sliced
  • 2 cups tortilla chips

Recipe

  • 1 combine chili powder, cumin, garlic, lime juice, olive oil and coriander. brush on to chicken breasts, onion rounds, red pepper and zucchini.
  • 2 marinate for 1 hour.
  • 3 dressing: to make dressing, combine mayonnaise, salsa, lime juice and cilantro. season with salt and pepper. set aside.
  • 4 preheat grill to high.
  • 5 season chicken and vegetables with salt and pepper. place chicken breasts and veggies on grill. grill chicken for about 5 minutes per side or until juices run clear. cool.
  • 6 grill veggies about 4 minutes per side or until tender. cool. remove skin from peppers, slice onions, peppers and zucchini into strips.
  • 7 when chicken has cooled, slice it and mix with dressing. add veggies and toss lightly to coat with dressing or, serve dressing on the side.
  • 8 garnish with avocado and tortilla chips.
