Crispy Mandarin Riblets

Ingredients

- 4 lbs lamb spareribs, sawed in thirds across bones by butcher
- 1/4 cup light soy sauce
- 2 tablespoons dry sherry
- 1 garlic clove, crushed
Recipe
- 1 cut ribs into 1-rib pieces.
- 2 place in steamer basket or on steamer rack.
- 3 set basket over boiling water, cover pan and steam 30 minutes.
- 4 meanwhile combine soy sauce, sherry and garlic in large bowl then add ribs and stir to coat each rib well.
- 5 marinate 1 hour, stirring frequently.
- 6 remove ribs from marinade and place, meaty side up, on rack of broiler pan.
- 7 bake in 425 degree oven 15 minutes, or until brown and crispy.
- 8 serve with warm mandarin peach sauce.
