Cranberry Waldorf Salad

Ingredients
- Servings: 6
- 12 -16 ounces fresh cranberries
- 1 (10 ounce) bag mini marshmallows
- 1 cup sugar
- 1 cup heavy cream
- 1 tart green apple, chopped
- 1 cup red seedless grapes, halved
- 1/2 cup broken walnuts or 1/2 cup pecans
Recipe
- 1 rinse the cranberries and remove any stems or leaves.
- 2 grind the cranberries and marshmallows together using a meat grinder or chop in a food processor.
- 3 turn the cranberry mixture into a bowl and add the sugar.
- 4 stir well, then cover and refrigerate overnight.
- 5 next day, whip the cream to soft peaks, then gently stir into cranberry mixture.
- 6 add the chopped apple (do not peel it), halved grapes and nuts and just mix through.
