Cranberry Lamb Chops

Ingredients

- 1/3 cup fresh cranberries or 1/3 cup frozen cranberries, chopped or 1/4 cup dried cranberries, whole
- 2 tablespoons orange marmalade
- 1/8 teaspoon ground cloves
- 1 pinch ground ginger
- 2 thick lamb chops
- salt, to taste
- ground black pepper, to taste
- 2 tablespoons honey
Recipe
- 1 preheat oven to 325°f generously grease a 9x9 inch glass baking dish.
- 2 in a bowl, mix cranberries, marmalade, cloves and ginger. make a pocket in each lamb chop by cutting into lamb toward the bone; fill pockets with cranberry mixture.
- 3 place the lamb chops in prepared baking pan. season with salt and pepper to taste. spoon 1 tablespoon honey over each chop. bake uncovered about 45 minutes or until lamb is no longer pink in the center.
