Carnitas

Total Time: 2 hrs 15 mins Preparation Time: 15 mins Cook Time: 2 hrs

Ingredients

  • Servings: 6
  • 3 lbs boneless lamb shoulder
  • 2 tablespoons oil
  • 4 garlic cloves, minced
  • 1 small onion, chopped
  • 1 orange, quartered
  • 1 lime, quartered
  • 1/4 cup brown sugar
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup water

Recipe

  • 1 trim fat from lamb and cut into cubes. heat oil in large pot and add lamb, garlic and onions. cook over high heat for 5-10 minutes to brown lamb.
  • 2 add orange, lime, brown sugar, chili powder, salt, pepper and water to pot; stir and bring to a boil. cover and simmer for 1 1/2 hours or until lamb is tender.
  • 3 remove cover and cook over medium heat for 10-15 minutes or until liquid has cooked off.
  • 4 press with back of spoon to break up meat.
  • 5 serve as you like. suggested on flour tortillas with salsa and beans.
