Ingredients

- 3 lbs boneless lamb shoulder
- 2 tablespoons oil
- 4 garlic cloves, minced
- 1 small onion, chopped
- 1 orange, quartered
- 1 lime, quartered
- 1/4 cup brown sugar
- 1 1/2 teaspoons chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup water
Recipe
- 1 trim fat from lamb and cut into cubes. heat oil in large pot and add lamb, garlic and onions. cook over high heat for 5-10 minutes to brown lamb.
- 2 add orange, lime, brown sugar, chili powder, salt, pepper and water to pot; stir and bring to a boil. cover and simmer for 1 1/2 hours or until lamb is tender.
- 3 remove cover and cook over medium heat for 10-15 minutes or until liquid has cooked off.
- 4 press with back of spoon to break up meat.
- 5 serve as you like. suggested on flour tortillas with salsa and beans.
