Fettuccine With Ham And Cream

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 4 ounces prosciutto, crudo or 4 ounces other unsmoked ham (raw or cooked)
  • 1/4 cup butter
  • 2 shallots, very finely chopper
  • 2/3 cup heavy cream
  • 12 ounces fettuccine
  • 1/2 cup parmesan cheese
  • salt and pepper
  • fresh parsley (to garnish)

Recipe

  • 1 cut the fat from the ham and chop both lean and fat parts seperately into small squares melt the butter in a medium frying pan and add the shallots and the squares of ham fat.
  • 2 cook until golden.
  • 3 add the lean ham, and cook for 2 more minutes.
  • 4 season with black pepper.
  • 5 stir in the cream.
  • 6 meanwhile, cook the pasta according to the directions on the package.
  • 7 drain and pour onto a warm serving dish.
  • 8 toss with the sauce.
  • 9 stir in the cheese and serve immediately, garnish with a sprig of parsley.
