Carne A La Castellan(castilian-style Sliced Beef)

Ingredients

  • Servings: 4
  • 5 tablespoons olive oil
  • 2 onions, sliced
  • 2 garlic cloves, minced
  • 1/2 lb cured ham, cut in 4 long thin slices, each cut in 4 pieces
  • 1 1/2 lbs beef, such as sirloin steak, cut in 1/4-inch-thick slices
  • 2 tablespoons flour
  • 1 1/2 cups beef broth
  • 1/2 cup dry red wine

Recipe

  • 1 heat 2 tablespoons olive oil in skillet.
  • 2 add and saute sliced onions and minced garlic slowly, cover til onions are tender.
  • 3 add ham, stir and remove from the heat.
  • 4 heat 1 tablespoon of olive oil in another skillet till smoking point.
  • 5 add the sirloin and fry quickly until just brown.
  • 6 remove and keep warm.
  • 7 put the last 2 tablespoons of olive oil in skillet.
  • 8 stir in flour and cook for a few minutes, add beef broth and dry red wine.
  • 9 keep stirring until smooth and thickened.
  • 10 to the sauce add the onion mixture. cook 5 minutes.
  • 11 add the sirlion back to the pan and heat for 1 minute.
