Carne A La Castellan(castilian-style Sliced Beef)

Ingredients
- Servings: 4
- 5 tablespoons olive oil
- 2 onions, sliced
- 2 garlic cloves, minced
- 1/2 lb cured ham, cut in 4 long thin slices, each cut in 4 pieces
- 1 1/2 lbs beef, such as sirloin steak, cut in 1/4-inch-thick slices
- 2 tablespoons flour
- 1 1/2 cups beef broth
- 1/2 cup dry red wine
Recipe
- 1 heat 2 tablespoons olive oil in skillet.
- 2 add and saute sliced onions and minced garlic slowly, cover til onions are tender.
- 3 add ham, stir and remove from the heat.
- 4 heat 1 tablespoon of olive oil in another skillet till smoking point.
- 5 add the sirloin and fry quickly until just brown.
- 6 remove and keep warm.
- 7 put the last 2 tablespoons of olive oil in skillet.
- 8 stir in flour and cook for a few minutes, add beef broth and dry red wine.
- 9 keep stirring until smooth and thickened.
- 10 to the sauce add the onion mixture. cook 5 minutes.
- 11 add the sirlion back to the pan and heat for 1 minute.
