General Tso's Lettuce Wraps

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 3 -4 skinless chicken breasts (trimmed of fat)
  • 1 cup stir-fry sauce (general tso's)
  • 1/2 cup cashews (lightly salted)
  • 1 (8 ounce) can bamboo shoots
  • 6 -8 romaine lettuce leaves

Recipe

  • 1 1. chop chicken breast into cubes and trim all fat.
  • 2 2. put sesame oil or olive oil into wok or pan to prevent sticking.
  • 3 3. season meat with salt and pepper while the meat cooks.
  • 4 4. once chicken starts to brown on outside, add cashews and bamboo shoots.
  • 5 5. then add enough general tso sauce to fully coat mixture.
  • 6 6. put mixture over lettuce leaves and enjoy!
  • 7 7. i usually serve with sticky rice or veggies on the side!
