General Tso's Lettuce Wraps

Ingredients
- Servings: 4
- 3 -4 skinless chicken breasts (trimmed of fat)
- 1 cup stir-fry sauce (general tso's)
- 1/2 cup cashews (lightly salted)
- 1 (8 ounce) can bamboo shoots
- 6 -8 romaine lettuce leaves
Recipe
- 1 1. chop chicken breast into cubes and trim all fat.
- 2 2. put sesame oil or olive oil into wok or pan to prevent sticking.
- 3 3. season meat with salt and pepper while the meat cooks.
- 4 4. once chicken starts to brown on outside, add cashews and bamboo shoots.
- 5 5. then add enough general tso sauce to fully coat mixture.
- 6 6. put mixture over lettuce leaves and enjoy!
- 7 7. i usually serve with sticky rice or veggies on the side!
