Haitian Mango Chicken

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1/4 cup chopped green pepper
  • 2 tablespoons butter
  • 1 chicken bouillon cube, crumbled
  • 1 cup mango, pureed
  • 1/2 cup orange juice
  • 1/2 cup water
  • 1/4 cup dry sherry
  • 1 tbsp.candied ginger, diced
  • 1 1/2 cups mangoes, cubed
  • 4 boneless chicken breasts
  • 2 cups rice, dry and cooked

Recipe

  • 1 pound chicken breasts to 1/4 inch thick.
  • 2 saute with green pepper in butter. remove chicken from skillet. add bouillon, pureed mango, orange juice, water, sherry and ginger.
  • 3 stir and simmer 5-10 minutes until sauce thickens.
  • 4 return chicken to skillet with cubed mango. heat through.
  • 5 serve with rice.
