Haitian Mango Chicken

Ingredients
- Servings: 4
- 1/4 cup chopped green pepper
- 2 tablespoons butter
- 1 chicken bouillon cube, crumbled
- 1 cup mango, pureed
- 1/2 cup orange juice
- 1/2 cup water
- 1/4 cup dry sherry
- 1 tbsp.candied ginger, diced
- 1 1/2 cups mangoes, cubed
- 4 boneless chicken breasts
- 2 cups rice, dry and cooked
Recipe
- 1 pound chicken breasts to 1/4 inch thick.
- 2 saute with green pepper in butter. remove chicken from skillet. add bouillon, pureed mango, orange juice, water, sherry and ginger.
- 3 stir and simmer 5-10 minutes until sauce thickens.
- 4 return chicken to skillet with cubed mango. heat through.
- 5 serve with rice.
