Gingered Chicken Breast

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 4 boneless skinless chicken breasts
  • 1 tablespoon fresh lemon juice
  • 1 1/2 teaspoons fresh ginger, freshly grated
  • 1/2 teaspoon ground pepper, freshly ground
  • 2 garlic cloves, minced

Recipe

  • 1 combine lemon juice, ginger, pepper and garlic in a small bowl.
  • 2 place chicken in a deep bowl and pour ginger mixture over the breasts.
  • 3 turn to coat, cover, and refrigerate 30 minutes to 2 hours.
  • 4 when ready to serve, spray large, non-stick skillet with cooking spray.
  • 5 heat skillet on med-high until hot. add chicken.
  • 6 cook, turning once, until tender and no longer pink. approx 8 - 10 minutes.
