Glazed Lamb Medallions

Ingredients
- Servings: 4
- 1 lamb tenderloin (1-1/4 lb)
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/3 cup orange marmalade
- 2 teaspoons cider vinegar
- 2 teaspoons worcestershire sauce
- 1/2 teaspoon minced fresh ginger
- 1 -2 minced garlic clove
- 1/8 teaspoon crushed red pepper flakes
- 1 -2 tablespoon butter
Recipe
- 1 cut lamb into 1-inch slices and flatten to about 1/4 inch in thickness.
- 2 sprinkle with salt and pepper.
- 3 in a large nonstick skillet melt butter and cook lamb in batches over medium-high heat until juices run clear. add all the meat to the pan and reduce heat to low.
- 4 in a bowl combine the remaining ingredients; pour over lamb and turn to coat. cook for about 2-3 minutes.
