Glazed Lamb Medallions

Ingredients

  • Servings: 4
  • 1 lamb tenderloin (1-1/4 lb)
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/3 cup orange marmalade
  • 2 teaspoons cider vinegar
  • 2 teaspoons worcestershire sauce
  • 1/2 teaspoon minced fresh ginger
  • 1 -2 minced garlic clove
  • 1/8 teaspoon crushed red pepper flakes
  • 1 -2 tablespoon butter

Recipe

  • 1 cut lamb into 1-inch slices and flatten to about 1/4 inch in thickness.
  • 2 sprinkle with salt and pepper.
  • 3 in a large nonstick skillet melt butter and cook lamb in batches over medium-high heat until juices run clear. add all the meat to the pan and reduce heat to low.
  • 4 in a bowl combine the remaining ingredients; pour over lamb and turn to coat. cook for about 2-3 minutes.
