Garlicky Meatballs Over Rice

Ingredients
- Servings: 4
- 3/4 lb extra lean ground beef
- 1 slice whole wheat bread, crumbled
- 1/4 cup salsa
- 4 garlic cloves, finely chopped
- 2 (8 ounce) cans tomato sauce
- 3 cups hot cooked rice
Recipe
- 1 mix all ingredients except tomato sauce and rice.
- 2 shape into sixteen 1 1/2-inch meatballs.
- 3 spray 10-inch nonstick skillet with nonstick cooking spray; heat over medium-high heat.
- 4 place meatballs in skillet; spray meatballs with nonstick cooking spray.
- 5 cook until meatballs are brown on all sides.
- 6 stir in tomato sauce.
- 7 heat to boiling; reduce heat to low.
- 8 cover and simmer about 20 minutes, stirring occasionally until meatballs are no longer pink in center.
- 9 serve over rice.
