Garlicky Meatballs Over Rice

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 3/4 lb extra lean ground beef
  • 1 slice whole wheat bread, crumbled
  • 1/4 cup salsa
  • 4 garlic cloves, finely chopped
  • 2 (8 ounce) cans tomato sauce
  • 3 cups hot cooked rice

Recipe

  • 1 mix all ingredients except tomato sauce and rice.
  • 2 shape into sixteen 1 1/2-inch meatballs.
  • 3 spray 10-inch nonstick skillet with nonstick cooking spray; heat over medium-high heat.
  • 4 place meatballs in skillet; spray meatballs with nonstick cooking spray.
  • 5 cook until meatballs are brown on all sides.
  • 6 stir in tomato sauce.
  • 7 heat to boiling; reduce heat to low.
  • 8 cover and simmer about 20 minutes, stirring occasionally until meatballs are no longer pink in center.
  • 9 serve over rice.
