Eye Of Round Roast

Total Time: 3 hrs 15 mins Preparation Time: 15 mins Cook Time: 3 hrs

Ingredients

  • Servings: 12
  • 3 lbs eye of round roast (trimmed of all fat)
  • pepper
  • 1 cup dry wine
  • 1 (1 1/4 ounce) package dry onion soup mix
  • 1 teaspoon olive oil

Recipe

  • 1 pepper roast and brown on all sides in 1 t olive oil.
  • 2 remove roast and place in aluminum foil in roasting dish.
  • 3 add onion soup mix and 1 cup wine to skillet with roast dripping and bring to boil. scrape up any brown bits from bottom of skillet.
  • 4 pour mixture over roast.
  • 5 seal roast completely in aluminum foil.
  • 6 bake at 350 degrees for 2.5-3 hours.
  • 7 remove, open packet and let rest for 15 minutes.
  • 8 slice and serve with gravy.
