Elegant & Easy Lemon Thyme Chicken

Ingredients
- 4 boneless skinless chicken breast halves
- 3 tablespoons all-purpose flour (divided use)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 teaspoons olive oil
- 1 medium onion, chopped
- 1 tablespoon butter
- 1/2 teaspoon dried thyme
- 1 cup chicken broth
- 3 tablespoons lemon juice
Recipe
- 1 combine flour, salt and pepper.
- 2 coat chicken with the flour mixture, and set aside 4 1/2 tablespoons for the sauce.
- 3 cook chicken in heated oil in a pan over medium heat until golden brown on both sides. set aside.
- 4 in the same pan, sautee the chopped onion in the butter until tender.
- 5 add lemon juice and continue to sautee. add reserved flour and thyme. gradually add broth, stirring continuously, deglazing the pan of any brown bits. bring the sauce to a boil to thicken.
- 6 turn down the head adn add chicken back in pan. simmer and cover until chicken in cooked through.
