Elegant & Easy Lemon Thyme Chicken

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 4 boneless skinless chicken breast halves
  • 3 tablespoons all-purpose flour (divided use)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 teaspoons olive oil
  • 1 medium onion, chopped
  • 1 tablespoon butter
  • 1/2 teaspoon dried thyme
  • 1 cup chicken broth
  • 3 tablespoons lemon juice

Recipe

  • 1 combine flour, salt and pepper.
  • 2 coat chicken with the flour mixture, and set aside 4 1/2 tablespoons for the sauce.
  • 3 cook chicken in heated oil in a pan over medium heat until golden brown on both sides. set aside.
  • 4 in the same pan, sautee the chopped onion in the butter until tender.
  • 5 add lemon juice and continue to sautee. add reserved flour and thyme. gradually add broth, stirring continuously, deglazing the pan of any brown bits. bring the sauce to a boil to thicken.
  • 6 turn down the head adn add chicken back in pan. simmer and cover until chicken in cooked through.
