Easy Peach Stuffed Lamb Chops

Total Time: 40 mins Preparation Time: 5 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 4 thick cut lamb chops
  • 1 package lamb stove top stuffing mix
  • 1 (15 ounce) can peaches in heavy syrup
  • 4 ounces peach preserves
  • 1 1/2 tablespoons pickapeppa sauce

Recipe

  • 1 pre-heat oven to 350 degrees.
  • 2 cut a pocket in chops.
  • 3 chop the can of peaches and reserve the syrup.
  • 4 prepare the stuffing using the reserved syrup and 1/2 the chopped peaches.
  • 5 stuff the chops and place in sprayed baking pan.
  • 6 in small bowl mix preserves remaining peaches and pickapeppa sauce and spoon over chops.
  • 7 cook chops for 20 minutes covered with foil.
  • 8 remove foil and add the rest of the sauce and cook an additional 15 minutes uncovered.
  • 9 do not overcook the lamb!
