Ingredients

- 1/2 lb sausage, bob evans original roll
- 1 cup potato, cooked and diced
- 3 tablespoons bell peppers, chopped
- 3 tablespoons onions, chopped
- 2 tablespoons milk
- 6 eggs
- salt and pepper, to taste
Recipe
- 1 stovetop:.
- 2 crumble sausage into frying pan.
- 3 add potatoes, pepper and onion.
- 4 cook slowly until meat is no longer pink.
- 5 beat eggs and combine with milk.
- 6 add to sausage mixture and cook, stirring occasionally to fluff eggs, until eggs have thickened.
- 7 refrigerate leftovers.
- 8 microwave:
- 9 in 2-quart glass casserole, crumble sausage and microwave on 100% power (high) for two minutes.
- 10 stir to break-up sausage.
- 11 stir in potatoes, peppers and onions.
- 12 microwave two minutes on 100% power (high).
- 13 beat eggs and combine with milk.
- 14 add to sausage mixture.
- 15 microwave 3 to 4 minutes on 100% power (high), stirring after each minute until eggs are set.
