Down-home Breakfast Special

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 1/2 lb sausage, bob evans original roll
  • 1 cup potato, cooked and diced
  • 3 tablespoons bell peppers, chopped
  • 3 tablespoons onions, chopped
  • 2 tablespoons milk
  • 6 eggs
  • salt and pepper, to taste

Recipe

  • 1 stovetop:.
  • 2 crumble sausage into frying pan.
  • 3 add potatoes, pepper and onion.
  • 4 cook slowly until meat is no longer pink.
  • 5 beat eggs and combine with milk.
  • 6 add to sausage mixture and cook, stirring occasionally to fluff eggs, until eggs have thickened.
  • 7 refrigerate leftovers.
  • 8 microwave:
  • 9 in 2-quart glass casserole, crumble sausage and microwave on 100% power (high) for two minutes.
  • 10 stir to break-up sausage.
  • 11 stir in potatoes, peppers and onions.
  • 12 microwave two minutes on 100% power (high).
  • 13 beat eggs and combine with milk.
  • 14 add to sausage mixture.
  • 15 microwave 3 to 4 minutes on 100% power (high), stirring after each minute until eggs are set.
