Chunky Meatless Chili

Ingredients

- 1 tablespoon oil
- 1 medium green pepper, chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (19 ounce) can kidney beans
- 1 (19 ounce) can pinto beans
- 1 (12 ounce) can kernel corn
- 1 (28 ounce) can tomatoes
- 1 cup uncooked rice
- 1 1/2 cups water
- 2 tablespoons chili powder
- 1 1/2 ground cumin
Recipe
- 1 heat big pot over medium-high heat.
- 2 saute green pepper, onion and garlic until onion is tender.
- 3 drain and rinse beans; drain corn.
- 4 stir in beans, corn, tomatoes, rice and water into onion mixture; season with chili powder and cumin.
- 5 bring to a boil.
- 6 reduce heat, cover and simmer 30 minutes, stirring occasionally.
