Focaccia Lobster Rolls

Ingredients

  • 1/2 cup mascarpone cheese, room temp
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon lemon juice
  • 1 garlic clove, minced
  • 1/2 lb lobster meat
  • 5 italian rolls
  • 2 tablespoons tarragon, chopped
  • 2 tablespoons chives, chopped

Recipe

  • 1 in a medium bowl stir together the mascarpone and evoo until combined and smooth. stir in herbs, lemon juice, garlic, salt and pepper.
  • 2 cut the lobster meat into nice big chunks.
  • 3 add the lobster to the herb sauce and toss to coat. divide the lobster mixture among the rolls and serve immediatly.
