Focaccia Lobster Rolls

Ingredients
- 1/2 cup mascarpone cheese, room temp
- 1/4 cup extra virgin olive oil
- 1 teaspoon lemon juice
- 1 garlic clove, minced
- 1/2 lb lobster meat
- 5 italian rolls
- 2 tablespoons tarragon, chopped
- 2 tablespoons chives, chopped
Recipe
- 1 in a medium bowl stir together the mascarpone and evoo until combined and smooth. stir in herbs, lemon juice, garlic, salt and pepper.
- 2 cut the lobster meat into nice big chunks.
- 3 add the lobster to the herb sauce and toss to coat. divide the lobster mixture among the rolls and serve immediatly.
