Cornmeal And Cumin Lamb Loin

Total Time: 50 mins Preparation Time: 5 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1 1/4 lbs boneless lamb loin
  • 2 -3 tablespoons cornmeal
  • 1 tablespoon cumin seed, roasted and crushed (or good powdered cumin)
  • 2 tablespoons olive oil

Recipe

  • 1 season lamb with salt and pepper.
  • 2 mix cornmeal and cumin together.
  • 3 turn lamb in this mixture to coat.
  • 4 heat oil in a skillet til hot but not smoking.
  • 5 brown lamb, turning, about 3 minutes.
  • 6 transfer lamb to a roasting pan.
  • 7 roast at 350°f for 25 to 30 minutes until internal temperature registers 155°f.
  • 8 let stand 10 minutes loosely covered.
  • 9 slice and serve.
