Cornmeal And Cumin Lamb Loin

- 1 1/4 lbs boneless lamb loin
- 2 -3 tablespoons cornmeal
- 1 tablespoon cumin seed, roasted and crushed (or good powdered cumin)
- 2 tablespoons olive oil
Recipe
- 1 season lamb with salt and pepper.
- 2 mix cornmeal and cumin together.
- 3 turn lamb in this mixture to coat.
- 4 heat oil in a skillet til hot but not smoking.
- 5 brown lamb, turning, about 3 minutes.
- 6 transfer lamb to a roasting pan.
- 7 roast at 350°f for 25 to 30 minutes until internal temperature registers 155°f.
- 8 let stand 10 minutes loosely covered.
- 9 slice and serve.
