Cinnamon Roasted Lamb Tenderloin

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 2
  • 4 cups cold water
  • 1/4 cup salt
  • 1 lb lamb tenderloin
  • 1 tablespoon cinnamon
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cumin
  • 1 tablespoon olive oil
  • 1 teaspoon honey

Recipe

  • 1 dissolve the salt in the water. add the tenderloin, and brine for one hour in the refrigerator.
  • 2 remove the tenderloin and pat dry.
  • 3 mix the next seven ingredients in a small bowl to make a wet rub.
  • 4 apply this rub to all areas of the tenderloin, place in a plastic bag, and let sit in the refrigerator for 1/2 hour to 12 hours.
  • 5 preheat the oven to 400 degrees.
  • 6 roast the tenderloin in the oven for 20-25 minutes.
  • 7 let stand for 5-10 mintues before slicing.
