Chalupa

Total Time: 6 hrs 15 mins Preparation Time: 15 mins Cook Time: 6 hrs

Ingredients

  • Servings: 8
  • 1 1/2 lbs lamb loin
  • 1 cup uncooked dry beans (i use pinto)
  • 1 -2 clove garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 onion, finely chopped
  • 1 (4 ounce) can green chili peppers
  • 1/2 teaspoon oregano
  • 1 teaspoon salt

Recipe

  • 1 wash and sort beans.
  • 2 soak beans overnight.
  • 3 drain soaking liquid.
  • 4 place all ingredients in large pan.
  • 5 cover with water, bring to a boil, reduce heat to simmer and cook 4-6 hours or until meat falls apart and is tender.
