Ginger Honey Chicken

Ingredients

- 2 whole frying chicken, cut in pieces
- salt and pepper
- 4 cups water
- 1/2 cup soy sauce
- 2 -3 teaspoons ground ginger powder
- 2 -3 cups brown sugar
- 1 -1 1/2 cup liquid honey
- 1 tablespoon cornstarch
- 3 tablespoons cold water
Recipe
- 1 set oven to 425 degrees.
- 2 grease a large cookie sheet with cooking spray.
- 3 to prepare the ginger-honey sauce: in a med-large saucepan mix the water, soy sauce, ginger, brown sugar and honey (adjust all ingredients to suit taste); bring to a boil and simmer for 10 minutes; remove from heat, and set aside.
- 4 (this step may be prepare hours in advance, even in the morning).
- 5 salt and pepper the chicken pieces, and place on the cookie sheet.
- 6 bake chicken for 40 minutes at 425 degrees; remove from oven.
- 7 bring the ginger-honey sauce back to a simmer on top of the stove.
- 8 mix the cornstarch with the cold water to make a paste.
- 9 add to the sauce, and simmer, stirring until thickened (if you prefer a thicker sauce mix more cornstarch with water, and add to the sauce, until reaching the desired thickness).
- 10 transfer the chicken to a large casserole dish.
- 11 pour the sauce over the chicken; mix with a wooden spoon to coat the chicken.
- 12 bake in the oven for about 20 minutes, or until the chicken is very tender -- delicious!
- 13 serve with rice.
