Crab, Mango, And Ginger Salad

Ingredients

  • Servings: 4
  • 1 lb lump crabmeat
  • 1 english cucumber, peeled, seeded, and thinly sliced
  • 1 large ripe mango, peeled and diced
  • 1/4 cup chopped fresh mint
  • 1 lime, juice and finely chopped zest thereof
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon fresh ginger, grated
  • 1 red chili, stemmed, seeded, and finely chopped
  • sea salt
  • fresh ground black pepper
  • arugula or frisee

Recipe

  • 1 in large bowl, combine crabmeat, cucumber, mango, and fresh mint.
  • 2 in small bowl, whisk together lime juice, zest, olive oil, ginger, and red chili. add to crabmeat mixture and season to taste with salt and pepper.
  • 3 put salad greens on plates and top with crab mixture.
