Crab, Mango, And Ginger Salad

Ingredients

- 1 lb lump crabmeat
- 1 english cucumber, peeled, seeded, and thinly sliced
- 1 large ripe mango, peeled and diced
- 1/4 cup chopped fresh mint
- 1 lime, juice and finely chopped zest thereof
- 3 tablespoons extra virgin olive oil
- 1 tablespoon fresh ginger, grated
- 1 red chili, stemmed, seeded, and finely chopped
- sea salt
- fresh ground black pepper
- arugula or frisee
Recipe
- 1 in large bowl, combine crabmeat, cucumber, mango, and fresh mint.
- 2 in small bowl, whisk together lime juice, zest, olive oil, ginger, and red chili. add to crabmeat mixture and season to taste with salt and pepper.
- 3 put salad greens on plates and top with crab mixture.
