Ginger Rum Chicken

Ingredients

- 4 skinless chicken breast halves
- salt, to taste
- black pepper, to taste
- paprika, to taste
- 1 egg yolk
- 1/2 cup honey
- 1/4 cup rum
- 1/2 cup chicken stock
- 2 cloves garlic, crushed
- 1/4 cup preserved gingerroot, chopped
- 1/4 teaspoon nutmeg
Recipe
- 1 preheat the oven to 375.
- 2 season the chicken with salt, pepper, and paprika to taste.
- 3 put the chicken in a shallow roasting pan.
- 4 beat egg yolk until light and then add the honey, rum, and chicken stock and beat until well mixed.
- 5 stir in garlic, ginger, and nutmeg.
- 6 pour the sauce over chicken and bake at 375 degrees for 45 to 60 minutes.
- 7 baste at least every 15 minutes.
