Ginger Rum Chicken

Ingredients

  • Servings: 4
  • 4 skinless chicken breast halves
  • salt, to taste
  • black pepper, to taste
  • paprika, to taste
  • 1 egg yolk
  • 1/2 cup honey
  • 1/4 cup rum
  • 1/2 cup chicken stock
  • 2 cloves garlic, crushed
  • 1/4 cup preserved gingerroot, chopped
  • 1/4 teaspoon nutmeg

Recipe

  • 1 preheat the oven to 375.
  • 2 season the chicken with salt, pepper, and paprika to taste.
  • 3 put the chicken in a shallow roasting pan.
  • 4 beat egg yolk until light and then add the honey, rum, and chicken stock and beat until well mixed.
  • 5 stir in garlic, ginger, and nutmeg.
  • 6 pour the sauce over chicken and bake at 375 degrees for 45 to 60 minutes.
  • 7 baste at least every 15 minutes.
