French Tarragon Chicken

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 400 g skinless chicken breasts, cut into thin strips
  • 1 red capsicum, very thinly sliced
  • 200 ml light sour cream
  • 1 garlic clove, finely chopped
  • 1 teaspoon french tarragon or 3 -4 tablespoons fresh french tarragon leaves
  • 2 tablespoons olive oil
  • salt and black pepper, to taste
  • 300 g fettuccine pasta

Recipe

  • 1 cook pasta in boiling water. drain.
  • 2 meanwhile, heat olive oil in a saucepan over a moderate heat and add garlic, capsicum and chicken.
  • 3 cook until chicken is cooked and golden and capsicum is soft, stirring constantly.
  • 4 add the tarragon, sour cream and salt and pepper and cook for approximately 2 minutes.
  • 5 serve the chicken on a bed of fettucine pasta.
