Ginger Lamb Chops

Ingredients
- Servings: 2
- 6 lamb loin chops (at least 1/2" thick)
- salt and pepper, to paste
- 5 tablespoons marsala wine (or medium sherry)
- 4 tablespoons ginger marmalade
Recipe
- 1 season the chops with salt& pepper.
- 2 lightly spray a skillet and brown the chops on both sides over high heat (apprx 1 minute each side).
- 3 add marsala wine.
- 4 spoon the marmalade over the chops.
- 5 cover and finish cooking.
- 6 the time depends on the thickness of the chop and how well done you like them.
- 7 medium/pink is apprx 3minutes per side.
