Fast Sherry Chicken

Ingredients

- 1 lb skinless chicken thigh, with bone
- 1/2 tablespoon garlic, minced
- 3/4 cup sherry wine (medium or dry)
- salt
- black pepper, freshly ground
Recipe
- 1 heat a nonstick skillet over medium-high heat.
- 2 spray with olive oil and add chicken.
- 3 brown 2 minutes, turn, add garlic and brown second side 1 minute.
- 4 lower heat to medium and add sherry.
- 5 cover with a lid and simmer 5 minutes or until a meat thermometer reads 180 degrees.
- 6 sprinkle with salt and pepper to taste.
