Fast Sherry Chicken

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 1 lb skinless chicken thigh, with bone
  • 1/2 tablespoon garlic, minced
  • 3/4 cup sherry wine (medium or dry)
  • salt
  • black pepper, freshly ground

Recipe

  • 1 heat a nonstick skillet over medium-high heat.
  • 2 spray with olive oil and add chicken.
  • 3 brown 2 minutes, turn, add garlic and brown second side 1 minute.
  • 4 lower heat to medium and add sherry.
  • 5 cover with a lid and simmer 5 minutes or until a meat thermometer reads 180 degrees.
  • 6 sprinkle with salt and pepper to taste.
