Euvedge Meatballs

Ingredients
- Servings: 8
- 1 lb ground lamb or 1 lb ground beef
- 1/2 cup uncooked rice
- 3/4 cup tomato juice
- 3/4 teaspoon fresh oregano
- 3/4 teaspoon fresh basil
- 3/4 teaspoon fresh dill
- 1 teaspoon crushed garlic
Recipe
- 1 combine all ingredients and put in the refrigerator for at least 30 minutes.
- 2 this allows the rice to absorb the liquid.
- 3 shape into balls and add it to the pot before adding the veggies.
- 4 let simmer 8-10 minutes and then gently add the rest of the veggies.
