Euvedge Meatballs

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 8
  • 1 lb ground lamb or 1 lb ground beef
  • 1/2 cup uncooked rice
  • 3/4 cup tomato juice
  • 3/4 teaspoon fresh oregano
  • 3/4 teaspoon fresh basil
  • 3/4 teaspoon fresh dill
  • 1 teaspoon crushed garlic

Recipe

  • 1 combine all ingredients and put in the refrigerator for at least 30 minutes.
  • 2 this allows the rice to absorb the liquid.
  • 3 shape into balls and add it to the pot before adding the veggies.
  • 4 let simmer 8-10 minutes and then gently add the rest of the veggies.
