Duck And Apple Loaf

Ingredients

  • Servings: 8
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 3 eggs
  • 1/3 cup olive oil
  • 1/3 cup milk
  • 4 ounces gruyere cheese, grated
  • 8 ounces fresh figs, chopped
  • 5 ounces smoked duck breast, slices fat removed shredded
  • 2 apples, peeled diced
  • salt and black pepper, to taste

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 sift together the flour and baking powder. in a bowl, beat the eggs, oil, and milk together. season with salt and pepper.
  • 3 carefully fold the egg mixture into the flour to make a smooth batter. add the cheese, figs, duck meat and apples. stir gently.
  • 4 lightly butter a loaf pan and dust with flour. pour in the mixture.
  • 5 bake for 50 minutes. check for doneness by sticking the blade of a knife into the loaf-it should come out dry.
  • 6 cool the loaf before removing from the pan. cut into small cubes and serve.
