Curried Lamb Tenderloin

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 2
  • 1 lb lamb tenderloin
  • 1 tablespoon brown sugar
  • 1 tablespoon curry powder
  • 1 teaspoon dry mustard
  • 1/2 teaspoon hungarian paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Recipe

  • 1 trim fat from lamb.
  • 2 mix sugar and spices in a small bowl.
  • 3 rub lamb with spice mixture.
  • 4 place lamb on a broiler pan coated with cooking spray.
  • 5 insert a meat thermometer in the thickest part.
  • 6 bake at 425 degrees for about 25-35 minutes, or until the thermometer registers 160 degrees (meat will be slightly pink in the center).
  • 7 let stand 5 minutes before slicing.
  • 8 serve with mango chutney.
