Curried Lamb Tenderloin

Ingredients

- 1 lb lamb tenderloin
- 1 tablespoon brown sugar
- 1 tablespoon curry powder
- 1 teaspoon dry mustard
- 1/2 teaspoon hungarian paprika
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Recipe
- 1 trim fat from lamb.
- 2 mix sugar and spices in a small bowl.
- 3 rub lamb with spice mixture.
- 4 place lamb on a broiler pan coated with cooking spray.
- 5 insert a meat thermometer in the thickest part.
- 6 bake at 425 degrees for about 25-35 minutes, or until the thermometer registers 160 degrees (meat will be slightly pink in the center).
- 7 let stand 5 minutes before slicing.
- 8 serve with mango chutney.
