Frankfurter (hound Dog) Jambalaya

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1 lb cooked lamb (cubed)
  • 3 frankfurters (ballpark style)
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 1 1/2 cups tomato sauce
  • 1 (14 ounce) can diced tomatoes
  • 1 1/2 teaspoons chili powder
  • 1/4 teaspoon hot pepper sauce
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground cayenne pepper
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon liquid smoke
  • 2 1/2 bay leaves
  • 1/2 teaspoon celery salt
  • 1 teaspoon celery seed
  • 0.5 (6 ounce) can tomato paste
  • 1 cup water
  • 1 cup rice (uncooked)

Recipe

  • 1 in a large pot saute lamb, franks, onions and garlic until onions are soft.
  • 2 stir in tomatoes, tomato sauce, tomato paste, chili powder, hot pepper sauce, black pepper, cayenne, worcestershire liquid smoke, water, rice and bay leaves.
  • 3 bring to a boil.
  • 4 reduce heat and simmer on very low heat until rice is cooked.

Glazed Cornish Game Hens

Ingredients

  • Servings: 4
  • 1/4 cup apple jelly
  • 1/2 teaspoon cinnamon
  • 2 rock cornish game hens, halved
  • 1 (6 ounce) box long grain and wild rice blend
  • salt
  • 2 teaspoons apple jelly
  • 1 1/2 cups red seedless grapes, halved or 1 red apple, cored and coarsely chopped
  • 1/2 cup thinly sliced celery
  • 1/3 cup unsalted cashews

Recipe

  • 1 combine 1/4 cup of jelly and cinnamon in a small sauce pan.
  • 2 heat and stir until melted; set aside.
  • 3 place hen halves, skin side up on a rack in a shallow roasting pan; sprinkle with salt.
  • 4 roast in 350 degree oven for 20 minutes.
  • 5 brush with the jelly/cinnamon mixture.
  • 6 roast for 20 to 30 minutes longer or until browned and tender.
  • 7 while hens are roasting, cook rice and contents according to the package directions.
  • 8 stir in 2 tablespoons apple jelly, grapes and celery.
  • 9 sprinkle cashews over rice and serve with the hens.

Crusty Grilled Peppercorn Steaks

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 6 (10 -12 ounce) beef shell steaks (or strip steaks)
  • 1 garlic clove, bruised, peeled
  • 1/4 cup olive oil (or as needed)
  • 1 cup cracked peppercorns, preferably a blend of black and (approximate amount) or 1 cup fresh coarse ground black pepper (approximate amount)
  • salt, to taste

Recipe

  • 1 pat steaks dry with paper towels. rub both sides of each steak with garlic, then brush lightly with olive oil.
  • 2 line large baking sheet or tray with waxed paper. spread thin layer of pepper on plate, lightly coat both sides of steak with pepper, and place on waxed paper. repeat with remaining steaks and additional pepper.
  • 3 meanwhile, prepare charcoal for grilling (or heat broiler).
  • 4 just before grilling, lightly salt both sides of steaks. grill steaks over hot fire or broil 4 inches from heat until browned and crusty on outside but still pink at center, about 5 minutes each side for medium-rare.
  • 5 transfer steaks to serving plates and serve at once.

Glazed Corned Beef (silver Palate)

Ingredients

  • Servings: 6
  • 3 lbs corned beef
  • 1 cup dark orange marmalade
  • 4 tablespoons dijon-style mustard
  • 4 tablespoons brown sugar

Recipe

  • 1 place corned beef in large pot and cover with boiling water.
  • 2 bring back to boil, lower heat, cover partially, and simmer as slowly as possible for about 3 hours, or until very tender when tested with a fork.
  • 3 preheat oven to 350°f
  • 4 mix marmalade, mustard and sugar in a bowl until well combined.
  • 5 when meat is done, remove from pot and drain.
  • 6 place meat in ovenproof dish and pour marmalade mixture over, coating thoroughly.
  • 7 bake for 30 minutes, or until glaze is crisp and brown. (mine had to go a few minutes more for the crispy coating -- worth it!).
  • 8 serve hot or at room temperature.

Blue Ribbon Barbecue Ribs

Total Time: 1 hr 45 mins Preparation Time: 15 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 4
  • 3/4 cup catsup
  • 3/4 cup water
  • 1 cup onion, chopped
  • 2 tablespoons sugar
  • 1 tablespoon worcestershire sauce
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon chili powder
  • 2 lbs lamb spareribs

Recipe

  • 1 combine all ingredients except for ribs in a small saucepan; bring to a boil.
  • 2 place ribs in a greased 13 x 9 baking pan; pour sauce over ribs.
  • 3 bake in a 375 degree oven for 1 1/2 hours or until done.

Chili

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 lb ground beef
  • 1 medium onions or 1 tablespoon onion powder
  • 1 1/2 tablespoons chili powder
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground cumin
  • 1 tablespoon vinegar
  • 16 ounces tomato sauce
  • 2 cups water

Recipe

  • 1 brown meat. drain.
  • 2 add other ingredients and simmer for 30+ minutes over low heat.

Brined Lamb Chops

Total Time: 43 mins Preparation Time: 15 mins Cook Time: 28 mins

Ingredients

  • Servings: 6
  • 6 cups water
  • 1/3 cup kosher salt
  • 1/3 cup brown sugar
  • 3 tablespoons chili powder
  • 6 bone in lamb chops
  • 1 tablespoon olive oil
  • pepper
  • salsa, of your choice

Recipe

  • 1 bring 2 c water to a boil.
  • 2 add sugar and salt and stir to dissolve.
  • 3 add chili powder and remaining water.
  • 4 remove from heat and cool.
  • 5 in a large bowl add lamb chops and brine.
  • 6 refrigerate 6 hours or overnight.
  • 7 remove chops from brine pat dry.
  • 8 brush with olive oil, season with pepper,.
  • 9 grill about 12-14 minutes per side until chops are done, or a thrmometer reads 160 degrees serve with salsa.
