Chile Colorado

Total Time: 2 hrs 50 mins Preparation Time: 20 mins Cook Time: 2 hrs 30 mins

Ingredients

  • Servings: 4
  • 3 cups beef or 3 cups lamb, cut into cubes
  • 3 tablespoons cooking oil
  • 2 tablespoons flour
  • 3 teaspoons chili powder
  • 1 large onion, chopped
  • 1 garlic clove, crushed
  • 1/4 teaspoon ground cumin
  • 3 cups water
  • 1 bay leaf
  • salt and pepper

Recipe

  • 1 in a large pot, brown meat in cooking oil.
  • 2 add flour and stir until browned.
  • 3 add next four ingredients, and cook until onion is tender.
  • 4 slowly add water and bring to a boil.
  • 5 reduce heat, add bay leaf and simmer until meat is tender, 2-3 hours.
